Ingredients
  

For the Mint Patty Filling
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons softened butter Ensure butter is at room temperature
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
For the Chocolate Coating
  • 1 cup chocolate chips Dark or milk chocolate
  • 1 tablespoon coconut oil Optional, for melting chocolate

Method
 

Preparation of Mint Filling
  1. In a mixing bowl, combine the powdered sugar, cocoa powder, softened butter, peppermint extract, and salt. Stir until a soft dough forms.
  2. Take small portions of the dough and roll them into little patties. Place them on a baking sheet lined with parchment paper.
  3. Freeze the patties for about 30 minutes until they are firm.
Melting Chocolate
  1. In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until smooth and glossy.
Coating the Patties
  1. Remove the mint patties from the freezer. Dip each one into the melted chocolate, letting the excess drip off.
  2. Place them back onto the parchment paper to cool.
  3. Chill in the refrigerator for about 20 minutes until the chocolate sets.

Notes

For extra festive touch, add crushed candy canes to the dough or dip in white chocolate for variation. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
