Preparation
- In a large mixing bowl, beat together the softened cream cheese and powdered sugar until smooth.
- Stir in the vanilla extract and 1/4 cup of mini chocolate chips.
- Scoop the mixture onto a sheet of plastic wrap and shape it into a ball. Wrap it tightly and refrigerate for 2 hours.
- Once chilled, unwrap the ball and roll it in the remaining 1/4 cup of mini chocolate chips.
Serving
- Serve the cheesecake ball with an assortment of graham crackers, pretzels, or fresh fruit.
Notes
For added flavor, sprinkle a dash of sea salt on top of the chocolate coating. Feel free to mix in nuts or coconut for a twist!
