Preparation
- Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar until thick and pale.
- Sift in the cocoa powder and gently fold it into the mixture.
- Spread the batter evenly in the prepared pan.
- Bake for 12-15 minutes or until the cake springs back when lightly touched.
- While the cake is baking, prepare a clean kitchen towel dusted with powdered sugar.
- Once the cake is done, immediately invert it onto the towel and peel off the parchment.
- Roll the cake up with the towel and let it cool completely.
Filling and Assembly
- For the filling, whip the heavy cream with vanilla extract until stiff peaks form.
- Unroll the cooled cake, spread caramel sauce and whipped cream evenly over it.
- Roll it up again, encasing the mixture within.
- Chill in the refrigerator for at least 1 hour before slicing.
Serving
- Dust with powdered sugar before serving. Slice and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for a couple of days.
