  • 1.5 cups rolled oats 120 g
  • 1 cup hot milk 250 ml
  • 2 medium ripe bananas
  • 2 large eggs
  • 4 tbsp cocoa powder 45 g
  • a pinch salt
  • 1 tbsp baking powder
  • 1.5 oz walnuts 40 g, finely chopped
  • 2.6 oz dark chocolate 75 g, for drizzling

Method
 

Preparation
  1. Combine rolled oats with hot milk in a bowl and let soak for about 10 minutes.
  2. Mash the ripe bananas with a fork and whisk in the eggs until smooth and creamy.
  3. Stir in cocoa powder, salt, and baking powder to the banana mixture.
  4. Finely chop the walnuts and set aside.
  5. Mix soaked oats into the banana-cocoa mixture and gently fold in the chopped walnuts.
Baking
  1. Preheat oven to 360°F (180°C).
  2. Pour batter into a baking dish and bake for about 40 minutes.
  3. Melt dark chocolate in a microwave or double boiler.
  4. Once the delight is done baking, drizzle melted chocolate over the top while still warm.
  5. Let cool for about 10 to 15 minutes before slicing.

Notes

Riper bananas yield a sweeter delight. Be careful not to over-mix for a fluffy texture. You can experiment with spices like cinnamon for added warmth. Store leftovers in an airtight container in the refrigerator for up to three days.
