Preparation
- Preheat your oven to 375°F (190°C) and line your baking sheets with silicone mats or parchment paper.
- In a frying pan, melt the butter and brown sugar over medium heat, stirring until smooth.
- Remove from heat and let it cool slightly before stirring in the oats, flour, and salt.
- Add the egg and vanilla extract, folding everything together until the batter is well mixed.
Baking
- Drop about 1 teaspoon of batter onto the prepared sheets, leaving about 2 inches between each dollop.
- Bake in the preheated oven for about 5-7 minutes until the edges turn golden brown.
- Let the cookies cool on the sheets for about 15 minutes before transferring them to wire racks.
Notes
Store cookies in an airtight container for up to 5 days. They freeze well for up to a month. For added flavor, consider adding a sprinkle of cinnamon, chopped nuts, or mini chocolate chips.
