  • 1/2 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 1 cup old-fashioned oats Do not use quick oats.
  • 1 Tbsp all-purpose flour Plus an additional 1 tsp.
  • 1/2 tsp fine salt
  • 1 large egg, room temperature
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line your baking sheets with silicone mats or parchment paper.
  2. In a frying pan, melt the butter and brown sugar over medium heat, stirring until smooth.
  3. Remove from heat and let it cool slightly before stirring in the oats, flour, and salt.
  4. Add the egg and vanilla extract, folding everything together until the batter is well mixed.
Baking
  1. Drop about 1 teaspoon of batter onto the prepared sheets, leaving about 2 inches between each dollop.
  2. Bake in the preheated oven for about 5-7 minutes until the edges turn golden brown.
  3. Let the cookies cool on the sheets for about 15 minutes before transferring them to wire racks.

Notes

Store cookies in an airtight container for up to 5 days. They freeze well for up to a month. For added flavor, consider adding a sprinkle of cinnamon, chopped nuts, or mini chocolate chips.
