Preparation
- In a large bowl, stir together the peanut butter, honey, vanilla, and salt.
- Add the oats and chopped trail mix; stir until incorporated.
- Press the granola bar mixture into a parchment-lined 9x9 pan.
- Lay a piece of parchment on top and use a flat measuring cup to press it down into an even layer.
- Refrigerate for an hour or more.
- Remove the parchment paper and cut into 16 bars.
- Melt the chocolate chips and drizzle on top.
Notes
For the best balance of chew and tenderness, serve at room temperature. Layer bars between parchment in an airtight container and refrigerate for up to 2 weeks.
