Chewy Granola Bars

These chewy granola bars require few ingredients and provide a hand-held comfort that is perfect for breakfast or a snack.

Ingredients
  

Wet Ingredients
  • 1 cup creamy peanut butter Use room-temperature for easier mixing.
  • 1/2 cup honey Can be substituted with blended date syrup for a deeper sweetness.
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
Dry Ingredients
  • 1 1/2 cups old-fashioned oats Add more if the mixture seems loose.
  • 1 cup quick oats
  • 2/3 cup trail mix Chopped mix of dried fruit, nuts, or chocolate.
  • 2 tablespoons chocolate chips Melted for drizzling on top.

Method
 

Preparation
  1. In a large bowl, stir together the peanut butter, honey, vanilla, and salt.
  2. Add the oats and chopped trail mix; stir until incorporated.
  3. Press the granola bar mixture into a parchment-lined 9x9 pan.
  4. Lay a piece of parchment on top and use a flat measuring cup to press it down into an even layer.
  5. Refrigerate for an hour or more.
  6. Remove the parchment paper and cut into 16 bars.
  7. Melt the chocolate chips and drizzle on top.

Notes

For the best balance of chew and tenderness, serve at room temperature. Layer bars between parchment in an airtight container and refrigerate for up to 2 weeks.
