For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure it's at room temperature.
  • 1 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 tablespoon orange zest Freshly grated for best flavor.
  • 1/2 cup chopped nuts Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the butter mixture.
  6. Gently fold in the dried cranberries, orange zest, and chopped nuts.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
Baking
  1. Bake for 10-12 minutes, until the edges are golden brown.
  2. Allow cookies to rest on the baking sheet for a few minutes before transferring them to wire racks to cool.

Notes

For extra chewiness, avoid overbaking; leaving them slightly underbaked will keep them soft. Use freshly grated orange zest for better flavor. Optional nuts can be omitted for nut allergies.
