  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter, chilled and cubed
  • 0.5 teaspoons baking powder
  • 1 pinch salt
  • 1 large egg yolk
  • 0.5 teaspoons vanilla extract
  • 0.25 teaspoons almond extract
  • 1 cups dried tart cherries, roughly chopped
  • 0.5 cups white chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by greasing it or lining it with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the chilled butter and work it into the dry mixture until it resembles coarse crumbs.
  4. Stir in the egg yolk, vanilla extract, and almond extract to form a soft dough, reserving one-third for the topping.
  5. Press the remaining dough into the bottom of the prepared pan to form a crust.
  6. Bake the crust for 10 to 12 minutes until the edges are set.
Assembly
  1. Combine the dried cherries and white chocolate chips in a bowl and sprinkle them over the warm crust.
  2. Crumble the reserved dough over the top of the filling.
Baking
  1. Return the pan to the oven and bake for an additional 20 to 25 minutes until the top is golden and the filling is bubbly.
  2. Allow to cool completely before cutting into squares.

Notes

For variations, you can substitute dried tart cherries with cranberries or sweet cherries, and consider adding nuts like almonds or pecans for added texture. Flaky sea salt atop adds a delightful contrast that enhances the sweetness.
