Ingredients
  

Cherry Filling
  • 500 g frozen or fresh pitted cherries
  • 1 tbs caster sugar
  • 1.5 tbs cornflour
  • 1 tsp vanilla bean paste
  • Coconut yoghurt, to serve Use as a topping when serving.
Crumble Topping
  • 2/3 cup plain flour
  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 100 g brown sugar
  • 100 g unsalted butter, chilled, chopped
  • 100 g dark (40%) chocolate, roughly chopped

Method
 

Preparation
  1. Preheat your oven to 200C/180C fan-forced.
  2. In a medium bowl, toss the cherries with the caster sugar, cornflour, and vanilla until well coated. Transfer to a round 1.5L-capacity baking dish.
Crumble Topping
  1. In another medium bowl, combine the flour, oats, coconut, brown sugar, and a pinch of salt flakes.
  2. With your fingertips, rub the chilled butter into the dry ingredients until the mixture resembles a sandy texture. Stir through the chopped chocolate.
Baking
  1. Evenly scatter the crumble topping over the fruit and bake for 30-35 minutes, or until the crumble is golden and bubbly.
Serving
  1. Serve warm with a generous spoon of coconut yoghurt.

Notes

For added flavor, consider sprinkling cinnamon or cardamom in the topping. Mixing sweet and tart cherries enhances depth, and substituting half the coconut with nuts adds texture. Serve with custard or vanilla ice cream for a richer experience.
