Preparation
- Preheat your oven to 325°F (163°C).
- Prepare an 8x8-inch baking pan by lining it with parchment paper.
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of the pan to create a crust.
- Bake for 8 minutes, then set aside to cool.
Making the Filling
- In another mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one by one, mixing well after each addition.
- Stir in sour cream and chopped pistachios.
- Pour the mixture over the cooled crust.
Baking and Cooling
- Bake for 35 to 40 minutes, until the center is set.
- Let the cheesecake cool to room temperature, then refrigerate for at least 3 hours.
Finishing Touches
- Spread the cherry pie filling over the top before cutting into bars.
