  • 4 tablespoons Unsalted Butter, melted
  • 2 tablespoons Granulated Sugar
Filling Ingredients
  • 16 ounces Cream Cheese Room temperature for easier mixing
  • 1 cup Granulated Sugar
  • 3 large Eggs Add one at a time, mixing well
  • 1 cup Sour Cream
  • 1/2 cup Chopped Pistachios For a nutty flavor
Topping Ingredients
  • 1 can Cherry Pie Filling To spread on top after chilling

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. Prepare an 8x8-inch baking pan by lining it with parchment paper.
  3. In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
  4. Press the mixture firmly into the bottom of the pan to create a crust.
  5. Bake for 8 minutes, then set aside to cool.
Making the Filling
  1. In another mixing bowl, beat the cream cheese and sugar until smooth.
  2. Add the eggs one by one, mixing well after each addition.
  3. Stir in sour cream and chopped pistachios.
  4. Pour the mixture over the cooled crust.
Baking and Cooling
  1. Bake for 35 to 40 minutes, until the center is set.
  2. Let the cheesecake cool to room temperature, then refrigerate for at least 3 hours.
Finishing Touches
  1. Spread the cherry pie filling over the top before cutting into bars.
