Crust and Topping Ingredients
  • 1/2 cup unsalted butter, melted and cooled Ensure butter is cooled before mixing to prevent sogginess.
  • 1/2 cup granulated sugar
  • 1 1/2 cups all purpose flour Can substitute with gluten-free flour if needed.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 2 cups cherry pie filling Fresh cherries can also be used.

Method
 

Preparation
  1. Preheat your oven to 375 degrees F. Line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine melted butter and granulated sugar, stirring until well blended.
  3. Add the flour, baking soda, baking powder, and kosher salt to the mixture. Blend until crumbly, reserving 3/4 cup for the topping.
  4. Press the remaining crumb mixture firmly into the prepared pan to form the crust.
  5. Pour the cherry pie filling over the crust, then sprinkle the reserved crumb mixture evenly on top.
Baking
  1. Bake in the preheated oven for 23-25 minutes, or until the top is golden brown.
  2. Allow to cool before slicing into bars.

Notes

For an extra flavor, consider adding a dash of almond extract to the cherry filling. A dusting of powdered sugar or a dollop of whipped cream elevates the presentation. Store in an airtight container to maintain freshness.
