Ingredients

Dough
  • 1 cup water, warmed (about 105 to 110 degrees F) Should feel like bath water.
  • 2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • 1/3 cup vegetable oil, divided
  • 2 1/2 cups all purpose flour
  • 1 teaspoon kosher salt
Topping
  • 3 tablespoons unsalted butter, melted For brushing over the crust.
  • 3 tablespoons granulated sugar
  • 1 can cherry pie filling (or homemade, about 2 cups)
  • 1 cup all purpose flour For crumble topping.
  • 2/3 cup granulated sugar
  • 6 tablespoons light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted, cooled slightly
Glaze
  • 1 cup confectioners' sugar
  • 1 tablespoon whole milk
  • 1/4 teaspoon almond extract

Method

Preparation of Dough
  1. In a large bowl, combine the warm water, sugar, and yeast. Let it rest for 5 minutes until foamy.
  2. Add half the oil to the yeast mixture, then add flour and salt, stirring until a soft, sticky dough forms.
  3. Transfer to a greased bowl, cover, and let rise for 1 hour until doubled.
Baking the Crust
  1. Preheat oven to 450 degrees F. Line a 12-inch pizza pan with parchment paper and pour remaining oil onto it.
  2. Press risen dough into the pizza pan and bake for 10 minutes until golden.
Adding Toppings
  1. In a small bowl, mix melted butter and granulated sugar. Brush this mixture over the crust, then spread the cherry pie filling evenly.
  2. In another bowl, combine flour, sugar, brown sugar, and salt for the crumble. Stir in melted butter until clumps form, then sprinkle over the filling.
Final Baking
  1. Bake again for 13-15 minutes until topping is golden.
  2. For the glaze, whisk confectioners' sugar, milk, and almond extract until smooth, then drizzle over the warm pizza.
  3. Let cool for 5-10 minutes before serving.
