Ingredients
  

For the muffins
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1/4 cup salted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 21 ounces cherry pie filling
For the topping
  • 1/4 cup salted butter, softened
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon milk

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, salt, and baking powder.
  3. In another bowl, whisk together the eggs, melted butter, sugar, vanilla extract, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the cherry pie filling.
  6. Spoon the batter into the muffin tins, filling each one about three-quarters full.
Topping
  1. In a small bowl, mix together the flour, sugar, baking powder, cinnamon, and milk until crumbly.
  2. Sprinkle the topping over each muffin.
Baking
  1. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  2. Allow to cool slightly before serving.

Notes

Serve warm with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to three days, or freeze for up to three months.
