Ingredients
  

Dry Ingredients
  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup 2 percent milk
  • 1/2 cup canola oil (or vegetable or melted coconut oil)
  • 1 large egg
  • 1 teaspoon almond extract
Fruits and Glaze
  • 2 jars (10 ounces each) maraschino cherries Coarsely chopped
  • 1 cup powdered sugar
  • 1 tablespoon melted butter For the glaze
  • 2 tablespoons maraschino cherry juice Reserved from the cherries

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Spray a 9x5 inch loaf pan with cooking spray or grease with shortening, then dust with flour.
  2. In a medium bowl, stir together the sugar, milk, oil, egg, and almond extract.
  3. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Drain the maraschino cherries, reserving the juice for the glaze. Coarsely chop the cherries.
  6. Gently fold the chopped cherries into the batter.
  7. Pour the bread batter into the prepared pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool for 10 minutes, then remove to a wire rack to cool completely.
Glazing and Serving
  1. To make the glaze, combine the powdered sugar, melted butter, cherry juice, and almond extract in a small bowl. Whisk until smooth.
  2. Once the bread is cool, spread the glaze on top.
  3. Slice and serve. Store any leftovers at room temperature in an airtight container.

Notes

For best results, drain the cherries well to avoid excess moisture in the batter. Serve warm or at room temperature.
