Ingredients
  

Wet Ingredients
  • 3/4 cup granulated sugar
  • 1/2 cup 2 percent milk
  • 1/2 cup canola oil or vegetable oil or melted coconut oil
  • 1 large egg
  • 1 teaspoon almond extract or vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Cherries and Glaze
  • 2 jars maraschino cherries drained and chopped
  • 1 cup powdered sugar
  • 1 tablespoon melted butter
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon almond extract

Method
 

Preparation
  1. Preheat your oven to 350°F. Grease a 9x5 inch loaf pan.
  2. In a medium bowl, stir together the granulated sugar, milk, oil, egg, and almond extract.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Drain and chop the maraschino cherries, then fold them into the batter.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  2. Let cool for about 10 minutes before transferring to a wire rack.
Glazing
  1. Whisk together the powdered sugar, melted butter, cherry juice, and almond extract for the glaze.
  2. Once the cherry bread is cool, spread the glaze over the top.

Notes

Store Cherry Bread at room temperature in an airtight container or freeze for longer storage. Don't skip the almond extract for added flavor, and feel free to add nuts for texture.
