Preparation
- Preheat oven to 200C/180C fan forced.
- Lightly grease a 2.5L or 10 cup baking dish.
- Cook macaroni according to packet instructions in boiling salted water and drain well.
- Heat olive oil in a large frying pan over high heat. Add chopped onion and cook for 1-2 minutes until translucent.
- Add beef mince and cook for 3-4 minutes until browned.
- Stir in beef stock, crushed tomatoes, French onion soup mix, and frozen vegetables. Mix to combine and bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Stir in cooked macaroni and 1 cup of cheese.
Baking
- Transfer the mixture into the prepared baking dish and sprinkle with remaining cheese.
- Bake for 20-25 minutes until the cheese is golden and bubbly.
Notes
For a creamier finish, stir through a knob of butter or a splash of cream before baking. For variations, swap beef with ground turkey or add chopped mushrooms and bell peppers.
