Ingredients
  

Potatoes
  • 5 small/medium potatoes peeled and cut into cubes
  • 1 tbsp olive oil for coating potatoes
  • 1/2 tsp salt for seasoning potatoes
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
Beef and Seasoning
  • 1 lb ground beef for the skillet mixture
  • 1/2 tsp salt for beef seasoning
  • 1/2 tsp pepper
  • 1/4 tsp cayenne for heat
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried cilantro
  • 1 tbsp minced garlic added at the end
Cheese and Toppings
  • 1 1/2 cups white Queso warmed before adding
  • to taste sour cream for serving
  • to taste Pico de Gallo for serving
  • to taste fresh cilantro for garnish

Method
 

Preparation
  1. Peel and wash the potatoes, then cut them into cubes.
  2. In a large bowl, toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Preheat the air fryer to 400 degrees.
Cooking Potatoes
  1. Air fry the seasoned potatoes for 20-25 minutes, shaking gently halfway through.
Cooking Beef
  1. In a skillet over medium-high heat, add ground beef and cook until browned. Drain excess grease.
  2. Stir in salt, cayenne, chili powder, cumin, paprika, and dried cilantro, and mix well.
  3. Add minced garlic and stir until fragrant.
Combining Ingredients
  1. Once the potatoes and ground beef are cooked, combine them in the skillet.
  2. Pour warmed white Queso over the mixture and stir to combine.
  3. Garnish with fresh cilantro before serving.
Serving
  1. Serve warm with a dollop of sour cream and a spoonful of Pico de Gallo.

Notes

For extra crispiness, parboil the potatoes before air frying. Try different cheese varieties for a twist. You can enhance depth by adding sautéed onions or bell peppers.
