Preparing the Cake
- Blend the condensed milk, evaporated milk, coconut milk, flour, sugar, eggs, and margarine in a blender until smooth.
- Grease and flour a Bundt pan and pour the mixture in.
- Preheat oven to 350°F (175°C) and bake for 30 to 60 minutes until a toothpick inserted comes out clean.
Making the Icing
- In a saucepan, mix the coconut milk, sugar, and shredded coconut.
- Stir over gentle heat until it reaches a boil.
- Remove from heat and let it cool slightly.
- Anoint the cake with the icing while still warm.
Notes
Serve on a well-loved platter, slice thick, and let the icing pool between layers. Pair with black coffee or spiced tea for a delightful contrast.
