Preparation
- Preheat your oven to 180°C (360°F).
- In a large bowl, mix together the flour, baking powder, eggs, sugar, milk, oil, crushed walnuts, grated carrots, and cinnamon until you have a smooth batter.
- Pour the batter into your cake or loaf tin.
Baking
- Bake for an hour, or until a skewer comes out clean.
- Once baked, let it cool.
Icing
- Combine the cream cheese, icing sugar, and lemon zest until creamy and spreadable.
- Top the cooled cake with the icing.
Notes
Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. Allow to come to room temperature before serving.
