Ingredients
  

For the crust
  • 250 g Butternut Snap biscuits
  • 100 g butter, melted
For the filling
  • 360 g Caramilk chocolate
  • 600 ml thickened cream

Method
 

Preparation
  1. Grease a 20cm springform tin and line the base and sides with baking paper.
  2. In a food processor, blitz the biscuits into a fine crumb.
  3. Add the melted butter to the crumbs and pulse to combine.
  4. Pour this mixture into the prepared tin and press it down firmly to create an even layer in the base.
  5. Refrigerate the crust while preparing the filling.
Filling
  1. Melt the Caramilk chocolate in short bursts in the microwave or gently over simmering water, ensuring no moisture comes in.
  2. Let the melted chocolate cool slightly.
  3. Whisk the thickened cream until it’s thick and fluffy.
  4. Gently fold in the cooled melted Caramilk chocolate.
  5. Pour the filling over the biscuit base and smooth the top with a spatula.
Chilling
  1. Refrigerate the cheesecake for at least an hour to set.
Serving
  1. Carefully remove the cheesecake from the tin and slice into pieces.
  2. Add a dollop of whipped cream if desired before serving.

Notes

For an elevated flavor, sprinkle some sea salt on top before serving. Serve with fresh berries or a drizzle of warm chocolate sauce for additional indulgence.
