Preparation
- Grease a 20cm springform tin and line the base and sides with baking paper.
- In a food processor, blitz the biscuits into a fine crumb.
- Add the melted butter to the crumbs and pulse to combine.
- Pour this mixture into the prepared tin and press it down firmly to create an even layer in the base.
- Refrigerate the crust while preparing the filling.
Filling
- Melt the Caramilk chocolate in short bursts in the microwave or gently over simmering water, ensuring no moisture comes in.
- Let the melted chocolate cool slightly.
- Whisk the thickened cream until it’s thick and fluffy.
- Gently fold in the cooled melted Caramilk chocolate.
- Pour the filling over the biscuit base and smooth the top with a spatula.
Chilling
- Refrigerate the cheesecake for at least an hour to set.
Serving
- Carefully remove the cheesecake from the tin and slice into pieces.
- Add a dollop of whipped cream if desired before serving.
Notes
For an elevated flavor, sprinkle some sea salt on top before serving. Serve with fresh berries or a drizzle of warm chocolate sauce for additional indulgence.
