- In a saucepan over medium heat, combine unsalted butter, brown sugar, and corn syrup or honey. Stir constantly until the mixture begins to bubble and turns glossy.
- Remove from heat and stir in the vanilla extract.
- In a large bowl, pour the caramel over the Rice Krispies cereal and mix well to ensure all cereal pieces are coated.
- Allow the mixture to cool for 5 minutes.
- Butter your hands and shape the mixture into bite-sized balls, placing them on parchment paper.
- Let the bites cool for 15 minutes until firm.
Serving
- Serve the Caramel Rice Krispie Bites on a plate, optionally topped with mini chocolate chips or rolled in crushed pretzels.
Notes
These treats can be stored in an airtight container for 4-5 days at room temperature or frozen for up to 2 months. For a fun variation, try adding peanut butter or swapping some Rice Krispies with Cocoa Krispies.
