Ingredients
  

For the caramel
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup light corn syrup or honey Can use honey for a different flavor
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract Provides aroma and flavor
For the bites
  • 4 cups Rice Krispies cereal
  • pinch salt Optional, for balance
  • mini chocolate chips Optional for topping
  • crushed pretzels or nuts Optional for added crunch

Method
 

Preparation
  1. In a saucepan over medium heat, combine unsalted butter, brown sugar, and corn syrup or honey. Stir constantly until the mixture begins to bubble and turns glossy.
  2. Remove from heat and stir in the vanilla extract.
  3. In a large bowl, pour the caramel over the Rice Krispies cereal and mix well to ensure all cereal pieces are coated.
  4. Allow the mixture to cool for 5 minutes.
  5. Butter your hands and shape the mixture into bite-sized balls, placing them on parchment paper.
  6. Let the bites cool for 15 minutes until firm.
Serving
  1. Serve the Caramel Rice Krispie Bites on a plate, optionally topped with mini chocolate chips or rolled in crushed pretzels.

Notes

These treats can be stored in an airtight container for 4-5 days at room temperature or frozen for up to 2 months. For a fun variation, try adding peanut butter or swapping some Rice Krispies with Cocoa Krispies.
