Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the filling
  • 32 oz cream cheese, softened 4 packages of 8 oz each
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup caramel sauce

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat softened cream cheese with a mixer until silky and smooth.
  4. Add in 1 cup sugar and 1 teaspoon vanilla, blending until well combined.
  5. Incorporate the eggs one by one, mixing carefully after each addition until the mixture is luscious.
  6. Pour the creamy mixture over the crust and drizzle with caramel sauce.
Baking
  1. Place the cheesecake in the oven and bake for 55 to 60 minutes, until the center is set but still has a slight jiggle.
Cooling
  1. Allow the cheesecake to cool, then refrigerate for at least 4 hours or overnight.

Notes

Ensure cream cheese is at room temperature for easier mixing. For an elevated experience, add a pinch of sea salt to the caramel drizzle.
