Method
Preparation of Brownie Base
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- Follow the brownie mix package instructions to make the batter, pour it into your pan, and bake according to package instructions.
- Let the brownies cool completely.
Cheesecake Filling
- Lower the oven temperature to 325°F (160°C).
- In a large mixing bowl, beat together softened cream cheese and granulated sugar until creamy.
- Add in vanilla extract, eggs, sour cream, and heavy cream. Blend until smooth.
Assembly and Baking
- Pour the cheesecake batter over the cooled brownie base.
- Swirl in half of the caramel sauce using a butter knife or toothpick.
- Bake in the oven for 1 hour and 15 minutes, until the center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Transfer to room temperature and chill in the fridge for at least 4 hours, preferably overnight.
Serving
- Garnish with whipped cream, drizzle with caramel sauce, and sprinkle with chocolate shavings before serving.
- Slice and serve cold, pairing with coffee or chai.
Notes
Ensure that cream cheese is fully softened for a smooth consistency. Cool the brownie base completely before adding the cheesecake to avoid melting. When swirling caramel, use less for defined streaks.
