Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the cheesecake filling
  • 2 packages cream cheese, softened (8 ounces each)
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 medium apples, peeled, cored, and diced
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until the mixture resembles damp sand. Press this mixture firmly into the bottom of the greased dish.
Making the Cheesecake Filling
  1. In a large bowl, beat together the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
  2. Add the eggs one at a time, mixing until thoroughly blended.
  3. Gently fold in the diced apples, caramel sauce, cinnamon, and nutmeg.
  4. Pour the cheesecake mixture over your crust.
Baking
  1. Bake for 30-35 minutes or until the center is set but still has a slight wobble.
  2. Once cooled, refrigerate the bars for at least 2 hours before cutting into squares.
Serving
  1. Drizzle additional caramel sauce on top before serving and garnish with whipped cream, cinnamon, or apple slices.

Notes

Allow cream cheese to warm to room temperature for a smoother batter. Use a mix of sweet and tart apples for added flavor. Experiment with different spices or ingredients for variations.
