Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until the mixture resembles damp sand. Press this mixture firmly into the bottom of the greased dish.
Making the Cheesecake Filling
- In a large bowl, beat together the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing until thoroughly blended.
- Gently fold in the diced apples, caramel sauce, cinnamon, and nutmeg.
- Pour the cheesecake mixture over your crust.
Baking
- Bake for 30-35 minutes or until the center is set but still has a slight wobble.
- Once cooled, refrigerate the bars for at least 2 hours before cutting into squares.
Serving
- Drizzle additional caramel sauce on top before serving and garnish with whipped cream, cinnamon, or apple slices.
Notes
Allow cream cheese to warm to room temperature for a smoother batter. Use a mix of sweet and tart apples for added flavor. Experiment with different spices or ingredients for variations.
