Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 0.5 cups unsalted butter, melted
Cheesecake Filling
  • 24 oz cream cheese, softened Use room temperature for a smooth batter.
  • 1 cup granulated sugar
  • 3 large eggs Add one at a time, mixing well after each addition.
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 0.5 cups caramel sauce (plus extra for topping) Warm slightly if thick.
  • 1 cup apple pie filling
Garnish
  • 1 apple chopped For garnish.
  • Crumpled graham crackers For garnish.

Method
 

Preparation
  1. Preheat oven to 325F (163C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press mixture into the bottom of the prepared pan to form a crust.
Filling
  1. In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth and creamy.
  2. Add eggs one at a time, beating well after each addition.
  3. Mix in vanilla extract and sour cream until well combined.
  4. Pour half of the cheesecake batter over the crust in the pan.
  5. Add a layer of apple pie filling and drizzle with caramel sauce.
  6. Pour the remaining cheesecake batter over the apple layer.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly browned.
  2. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  3. Remove from oven and refrigerate for at least 4 hours, or overnight.
Serving
  1. Before serving, garnish with chopped apples, crumbled graham crackers, and extra caramel sauce.
