Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until it resembles fine sand.
- Press the mixture firmly into the bottom of a 9x13 inch baking dish.
Baking the Crust
- Bake the crust for 10 minutes, then allow it to cool slightly.
Making the Filling
- In a large bowl, beat together the ricotta cheese, cream cheese, and powdered sugar until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract and mini chocolate chips.
Baking the Cheesecake
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Bake for 30-35 minutes until the edges are set but the middle jiggles slightly.
Cooling and Serving
- Allow the cheesecake bars to cool at room temperature, then refrigerate for at least 4 hours.
- Slice into bars and serve, possibly garnished with powdered sugar or chocolate drizzle.

For optimal flavor, chill the bars overnight. Consider adding a splash of liqueur for extra depth.
