Ingredients
  

Graham Cracker Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
Cheesecake Filling
  • 16 oz ricotta cheese
  • 8 oz cream cheese, softened Ensure cream cheese is softened for a smoother mixture.
  • 0.75 cups powdered sugar
  • 2 large eggs Add one at a time for better incorporation.
  • 1 tsp vanilla extract
  • 0.5 cups mini chocolate chips Add for a delightful surprise.
  • 0.25 cups chopped pistachios Optional, for added flavor and texture.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar until it resembles fine sand.
  3. Press the mixture firmly into the bottom of a 9x13 inch baking dish.
Baking the Crust
  1. Bake the crust for 10 minutes, then allow it to cool slightly.
Making the Filling
  1. In a large bowl, beat together the ricotta cheese, cream cheese, and powdered sugar until smooth.
  2. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract and mini chocolate chips.
Baking the Cheesecake
  1. Pour the cheesecake filling over the cooled crust and spread evenly.
  2. Bake for 30-35 minutes until the edges are set but the middle jiggles slightly.
Cooling and Serving
  1. Allow the cheesecake bars to cool at room temperature, then refrigerate for at least 4 hours.
  2. Slice into bars and serve, possibly garnished with powdered sugar or chocolate drizzle.

Notes

For optimal flavor, chill the bars overnight. Consider adding a splash of liqueur for extra depth.
