Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 6 tbsp unsalted butter, melted
For the filling
  • 16 oz cream cheese, softened Make sure it is at room temperature.
  • 0.5 cups granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup ricotta cheese
  • 0.5 cups mini chocolate chips For added sweetness.
  • 0.25 cups powdered sugar For dusting before serving.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of a lined pan.
  4. In a separate bowl, beat softened cream cheese with 1/2 cup granulated sugar until smooth.
  5. Add eggs one at a time, blending fully after each addition. Stir in vanilla extract.
  6. Fold in ricotta cheese and mini chocolate chips.
Baking
  1. Pour the filling over the prepared crust and smooth it out.
  2. Bake for 40-45 minutes until the edges are set, but the center remains jiggly.
Cooling and Serving
  1. Let the bars cool completely at room temperature.
  2. Refrigerate for at least four hours before serving.
  3. Dust with powdered sugar before slicing.

Notes

Store in an airtight container in the refrigerator for up to one week.
