Preparation
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a lined pan.
- In a separate bowl, beat softened cream cheese with 1/2 cup granulated sugar until smooth.
- Add eggs one at a time, blending fully after each addition. Stir in vanilla extract.
- Fold in ricotta cheese and mini chocolate chips.
Baking
- Pour the filling over the prepared crust and smooth it out.
- Bake for 40-45 minutes until the edges are set, but the center remains jiggly.
Cooling and Serving
- Let the bars cool completely at room temperature.
- Refrigerate for at least four hours before serving.
- Dust with powdered sugar before slicing.
