  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the filling
  • 1 cup assorted hard candies, crushed Use candies like Jolly Ranchers or Life Savers.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, blending until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually fold the dry mixture into the wet mixture, forming a soft dough.
  6. Divide the dough in half, shape into disks, and refrigerate for 30 minutes.
Shaping the Cookies
  1. Roll the dough out on a lightly floured surface to 1/4 inch thick.
  2. Use large cookie cutters to cut shapes and smaller cutters to remove the centers.
  3. Place the cookies on the baking sheets and fill the centers with crushed candy.
Baking
  1. Bake in the preheated oven for 8 to 10 minutes until the edges are golden.
  2. Let the cookies cool completely on the parchment before serving.

Notes

Store cookies in an airtight container at room temperature to keep them soft. Experiment with different hard candies for flavor variations.
