Ingredients
  

For the squash
  • 2 lbs peeled, cubed butternut squash
  • 1 tbsp extra virgin olive oil
  • 1 tbsp finely chopped fresh rosemary
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp black pepper
  • salt to taste
  • 1 dash cayenne pepper (optional) Adds a hint of heat

Method
 

Preparation
  1. Cut the peeled cubed butternut squash into 1-2 inch cubes or prep a whole butternut squash if that's what you have. Place in a large mixing bowl.
  2. Add olive oil, rosemary, and dried seasonings to the squash and stir until the squash is evenly coated.
Cooking
  1. Place the squash into the air fryer in a single layer. Cook at 400°F for 20-25 minutes, shaking or turning the basket halfway through.
Serving Suggestions
  1. Serve warm, scattered over wilted greens, folded into grain bowls, or alongside roasted chicken and soft polenta.
  2. Finish with a squeeze of lemon or a scattering of shaved parmesan for added flavor.

Notes

Make sure to dry the cubes well before oiling to ensure they caramelize instead of steaming. If the squash seems dry, add a touch more oil; if it’s soggy, a quick broiling will help restore crispness.
