Method
Dough Preparation
- In a large bowl or stand mixer, combine 3 cups of flour, undissolved yeast, sugar, egg, and a sprinkle of salt.
- Pour warm milk into the mixture and knead at medium speed for 2 minutes until a coherent mass forms.
- Add the remaining 1/2 cup flour and knead for another 2 minutes until the dough pulls away from the bowl.
- Spray a bowl with nonstick cooking spray and place the dough inside, covering it with a towel to rise for 30 minutes.
Shaping and Second Rise
- While dough rises, spray a muffin tin with cooking spray. Roll dough into a 1/2 inch thick square.
- Brush the dough generously with melted butter and sprinkle with optional salt.
- Slice the dough into 12 strips and stack them, then slice each stack into 6 pieces.
- Place the pieces into the muffin tin on their sides, cut side up. Cover with greased plastic wrap and let them rise for another 30-40 minutes.
Baking
- Preheat the oven to 375°F.
- Bake rolls for 12-17 minutes until they turn golden brown.
- Brush with melted butter and sprinkle with kosher salt before serving.
Notes
Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months. Reheat in the oven before serving.
