Ingredients
  

For the dough
  • 4 cups all-purpose flour, or more if needed
  • 2 envelopes instant yeast
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon kosher salt
  • 1 1/2 cups whole milk, warmed should be warm but not hot
  • 2 tablespoons salted butter, melted
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon kosher salt, optional

Method
 

Dough Preparation
  1. In a large bowl or stand mixer, combine 3 cups of flour, undissolved yeast, sugar, egg, and a sprinkle of salt.
  2. Pour warm milk into the mixture and knead at medium speed for 2 minutes until a coherent mass forms.
  3. Add the remaining 1/2 cup flour and knead for another 2 minutes until the dough pulls away from the bowl.
  4. Spray a bowl with nonstick cooking spray and place the dough inside, covering it with a towel to rise for 30 minutes.
Shaping and Second Rise
  1. While dough rises, spray a muffin tin with cooking spray. Roll dough into a 1/2 inch thick square.
  2. Brush the dough generously with melted butter and sprinkle with optional salt.
  3. Slice the dough into 12 strips and stack them, then slice each stack into 6 pieces.
  4. Place the pieces into the muffin tin on their sides, cut side up. Cover with greased plastic wrap and let them rise for another 30-40 minutes.
Baking
  1. Preheat the oven to 375°F.
  2. Bake rolls for 12-17 minutes until they turn golden brown.
  3. Brush with melted butter and sprinkle with kosher salt before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 2 months. Reheat in the oven before serving.
