Ingredients
  

Cookie Dough Ingredients
  • 1 cup unsalted butter, softened For the cookie dough

  • 1 cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
Peanut Butter Filling Ingredients
  • 1 1/4 cups creamy peanut butter
  • 3/4 cup unsalted butter, softened For the peanut butter filling
  • 2 1/2 cups confectioners' sugar
Chocolate Ganache Ingredients
  • 1 1/3 cups semi-sweet chocolate chips
  • 1/2 cup unsalted butter For the ganache

Method
 

Making the Cookie Dough
  1. In a stand mixer or large bowl, beat together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  2. Add in the eggs and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and kosher salt.
  4. Gradually fold the dry ingredients into the wet mixture until combined.
  5. Cover the dough with plastic wrap and chill in the fridge for at least one hour.
Baking the Cookies
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Scoop and roll the chilled dough into balls and place on the prepared baking sheets with a 2-inch gap.
  3. Bake for 8-10 minutes until the edges are set. Let the cookies cool completely.
Making the Peanut Butter Filling
  1. In a bowl, beat together creamy peanut butter and softened butter until smooth.
  2. Gradually add in the confectioners' sugar until the mixture is fluffy.
  3. Spoon a dollop of the peanut butter mixture onto each cooled cookie and press down gently.
Making the Chocolate Ganache
  1. Melt together the chocolate chips and butter in a heat-safe bowl over simmering water.
  2. Stir until smooth, then spoon the ganache over each cookie.
  3. Allow the ganache to set at room temperature or chill briefly.

Notes

Keep cookies in an airtight container at room temperature for up to a week. Experiment with different fillings and chocolates for variations.
