Ingredients
  

For the Gelatin Bubbles
  • 2 packages .25 oz each powdered gelatin
  • 1-2 drops liquid food color
  • 4 tablespoons cold water
  • 1/8 teaspoon white or silver pearl luster dust
  • Clear vegetable shortening For coating balloons
  • Small artists brush For applying luster dust
For the Cupcakes
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter Softened
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1 2/3 cups all-purpose flour
  • 1/2 cup heavy cream
  • 1/2 cup full-fat sour cream
For the Frosting
  • 1/2 cup unsalted butter Softened
  • 1 cup confectioners sugar
  • 2-4 drops LorAnn concentrated bubblegum candy flavor
  • Pastel star confetti sprinkles For decoration
  • Milk or heavy cream Optional, for thinning frosting

Method
 

Prepare the Gelatin Bubbles
  1. Inflate small balloons and coat them with vegetable shortening.
  2. Mix powdered gelatin with cold water and food color until combined.
  3. Dip the balloons into the gelatin and set them aside to dry for 24 hours.
Make the Cupcake Batter
  1. Preheat your oven to 350°F and line cupcake pans with liners.
  2. Beat the sugar and butter together until light and fluffy.
  3. Add the eggs one at a time, then blend in vanilla, salt, baking powder, and baking soda.
  4. Alternately add flour with heavy cream and sour cream until well blended.
Bake the Cupcakes
  1. Spoon batter into liners, filling them about two-thirds full.
  2. Bake for 22-25 minutes or until a toothpick comes out clean.
  3. Allow cupcakes to cool completely on a wire rack.
Prepare the Frosting
  1. Beat butter and confectioners sugar together until creamy.
  2. Add bubblegum flavor, adjusting to taste as needed.
Frost the Cupcakes
  1. Frost cooled cupcakes with bubblegum frosting.
  2. Sprinkle with pastel star confetti and add gelatin bubbles on top.

Notes

Beat butter and sugar until fluffy for the best texture. Experiment with frosting colors and sprinkles. For more bubblegum flavor, add essence.
