  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken breasts, cut into 1-inch bite-sized pieces
  • 1.5 teaspoons Italian seasoning blend
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 cups diced fresh tomatoes (Roma or Campari) For the best flavor, use fresh tomatoes.
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon minced garlic
  • 1 cup shredded mozzarella cheese Or more, to taste.
  • 2 teaspoons fresh basil, chopped for garnish For garnish before serving.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare an 8x8 baking dish by spraying it lightly with cooking spray.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken pieces in a single layer and season with Italian seasoning, salt, and black pepper. Cook for 8-10 minutes until golden brown and fully cooked, reaching an internal temperature of 165°F (75°C).
  4. In a separate bowl, combine the diced tomatoes, minced garlic, and balsamic vinegar.
Assembly
  1. Spread half of the tomato mixture on the bottom of the prepared baking dish.
  2. Layer the cooked chicken on top of the tomato mixture, then add the remaining tomato mixture over the chicken.
  3. Sprinkle shredded mozzarella cheese generously over the top.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbling and golden.
  2. Let cool for 2-3 minutes, then top with freshly chopped basil before serving.

Notes

Allow leftovers to cool completely before storing in an airtight container. They will keep in the refrigerator for up to three days. For best results, use fresh tomatoes.
