Frosting

  • 1 cup confectioners sugar For icing
  • 1 tablespoon jammy blueberries
  • 1 tablespoon water, room temperature For icing

Method
 

Preparation
  1. Begin by microwaving the butter until nearly melted, then whisk until fully liquefied, allowing it to cool.
  2. In a separate bowl, whisk together the gluten-free flour, baking powder, and kosher salt.
  3. Combine the cornstarch and water in a small bowl, mixing until smooth.
  4. In the cooled butter, whisk in the brown sugar, cornstarch mixture, and vanilla extract until emulsified.
  5. Gradually add half of the flour mixture, followed by the milk, and then incorporate the remaining flour gently to achieve a cohesive dough.
  6. Cover the dough and chill for 45 minutes.
Baking
  1. Preheat your oven to 325°F (163°C). Shape the chilled dough into discs and place them on a lined baking sheet.
  2. Bake for approximately 15 minutes; reshape the cookies if necessary as they come out.
Frosting
  1. Microwave the blueberries until tender, then blend with softened butter, cream cheese, confectioners' sugar, and additional vanilla until smooth.
  2. Allow the cookies to cool completely before frosting them.
  3. Finish by drizzling with an icing made from confectioners' sugar mixed with blueberry and water.
  4. Let the icing set before serving.
