Ingredients
  

For the crust and filling
  • 1 cup unsalted butter, softened Soften to room temperature
  • 1/2 cup brown sugar
  • 3/4 cup confectioners' sugar
  • 2 tsp pure vanilla extract
  • 1 pinch salt
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 cup brown sugar, lightly packed For the filling
  • 1 Tbsp ground cinnamon For the filling
  • 2 Tbsp all-purpose flour For the filling
  • 3 Tbsp unsalted butter, melted For the filling
For the glaze
  • 1 cup confectioners' sugar
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 3-4 Tbsp heavy cream or milk

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line an 8-inch square baking dish with parchment paper, extending over two sides for easy lifting later. Lightly spray with baking spray.
  2. In a stand mixer, cream together the butter and brown sugar until smooth and creamy, about three minutes.
  3. Add the egg and mix to combine. Add confectioners' sugar, vanilla extract, and salt, beating until just combined.
  4. Gradually add in the flour, mixing until just incorporated.
  5. Divide the dough in half. Firmly press one half into the base of your prepared pan, ensuring an even layer.
  6. Shape the other half into an 8x8 inch square on parchment paper and set aside.
Filling
  1. Mix together the brown sugar, cinnamon, and flour in a bowl. Incorporate the melted butter, blending well.
  2. Evenly spread the filling mixture over the dough in the pan.
  3. Carefully place the reserved dough square over the filling, pressing down gently to secure.
Baking
  1. Bake for 30-40 minutes, or until the bars turn golden brown and the dough feels set to touch.
  2. Once done, let the bars cool completely.
Glazing
  1. Whisk together the confectioners' sugar, cinnamon, vanilla, salt, and cream until smooth.
  2. Lift the cooled bars out of the pan using the parchment overhang, drizzle the glaze over, and spread evenly.
  3. Allow the glaze to set, then cut into squares and serve.

Notes

Serve these warm with milk or coffee. Keep leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
