Preparation
- Roll out the puff pastry to about 1½ times its size.
- Cut out 8 circles using a 3½-inch cookie cutter.
- Lay parchment paper on a sheet pan and drizzle honey onto the parchment.
- Score the mini brie rounds gently and place them on top of the honey.
- Wrap the puff pastry around the brie and pinch the edges closed with a fork.
- Brush the bites with the beaten egg.
Baking
- Bake in a preheated oven at 400°F for 20-22 minutes until golden.
- Sprinkle with chives and drizzle with additional honey before serving.
Notes
Serve hot with a bold red wine or sparkling beverage. Store leftovers in an airtight container in the fridge for up to two days, reheating in the oven to maintain crispiness. Don't skip scoring the brie for best flavor!
