Ingredients
  

Main Ingredients
  • 500 g bacon (diced)
  • 1 medium onion (diced)
  • 1 medium capsicum (diced)
  • 12 large eggs
  • 1 cup milk
  • 2 cups diced cooked potatoes
  • 2 stalks green onions (chopped)
  • 2 cups grated cheese
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper.
  2. In a hot pan, sauté the diced bacon, onion, and capsicum until golden brown.
  3. Transfer the bacon mix into the prepared baking dish.
  4. Sprinkle the diced cooked potatoes and chopped green onions evenly over the bacon mixture.
  5. In a large bowl, whisk together the eggs, milk, salt, and pepper until frothy.
  6. Pour the egg mixture over the bacon and potato layer.
Baking
  1. Bake for 30 minutes.
  2. Sprinkle the grated cheese on top and bake for an additional 10 minutes until golden brown and bubbly.
Serving
  1. Let it cool slightly before slicing and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Freeze individual portions for longer storage. Use leftover roasted vegetables for added flavor.
