Ingredients
  

For the Cookies
  • 1/2 cup unsalted butter, softened Ensure butter is truly softened, not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract Use pure vanilla extract for best flavor.
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free blend.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vanilla pudding mix Can use store-bought pudding if chilled.
For the Topping
  • 1/2 cup chocolate frosting Feel free to use homemade or store-bought.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract, letting the aroma fill your kitchen.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in the vanilla pudding mix until smooth.
Baking
  1. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
Assembly
  1. Allow the cookies to cool completely on a wire rack.
  2. Spread a small amount of vanilla pudding onto half of the cookies, then gently top them with the other half.
  3. Drizzle chocolate frosting over the top or spread it on generously.

Notes

Store leftover cookies in an airtight container at room temperature for a couple of days. You can chill the dough for 30 minutes if it’s too sticky to handle. Adding crushed nuts or sprinkles on top of the chocolate frosting adds a nice touch.
