Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract, letting the aroma fill your kitchen.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the vanilla pudding mix until smooth.
Baking
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
Assembly
- Allow the cookies to cool completely on a wire rack.
- Spread a small amount of vanilla pudding onto half of the cookies, then gently top them with the other half.
- Drizzle chocolate frosting over the top or spread it on generously.
Notes
Store leftover cookies in an airtight container at room temperature for a couple of days. You can chill the dough for 30 minutes if it’s too sticky to handle. Adding crushed nuts or sprinkles on top of the chocolate frosting adds a nice touch.
