Ingredients
  

For the crust
  • 1.25 cups all-purpose flour
  • 0.5 cups unsalted butter, cold and cubed
  • 0.25 cups powdered sugar
  • 1 large egg yolk
  • 1-2 tablespoons cold water
  • 1 pinch salt
For the blueberry filling
  • 1.5 cups fresh or frozen blueberries Thaw and drain if using frozen.
  • 0.33 cups granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
For the cream cheese frosting
  • 8 ounces cream cheese, softened
  • 0.25 cups unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

  • lemon zest For added flavor

Method
 

Preparation of the crust
  1. Preheat your oven to 350 degrees F.
  2. In a mixing bowl, combine flour, powdered sugar, and salt.
  3. Cut in the cold butter until the mixture looks crumbly.
  4. Add the egg yolk and just enough cold water to form a dough.
  5. Chill the dough for about 20 minutes.
Baking the crust
  1. Roll out the dough and press it into tartlet pans. Prick the bottoms with a fork.
  2. Bake for 12 to 15 minutes until golden. Let cool.
Making the blueberry filling
  1. In a saucepan over medium heat, combine blueberries, sugar, lemon juice, cornstarch, and water.
  2. Stir until the mixture thickens, then allow it to cool completely.
Making the cream cheese frosting
  1. In a large bowl, beat softened cream cheese and butter until smooth.
  2. Gradually add powdered sugar and vanilla, beating until creamy.
Assembling the tartlets
  1. Spoon blueberry filling into each prepared tart shell.
  2. Pipe the cream cheese frosting on top using a large star tip.
  3. Garnish with fresh blueberries and a dusting of powdered sugar.

Notes

Keep ingredients cold for a flaky crust. Fresh berries are recommended for best flavor. Involve kids in the decorating process for family fun.
