Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 1-2 tablespoons cold water
  • Pinch of salt
For the blueberry filling
  • 1 1/2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
For the cream cheese filling
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation of the crust
  1. Preheat your oven to 350°F.
  2. In a bowl, mix together flour, powdered sugar, and a pinch of salt.
  3. Cut in the cold butter until you have a crumbly texture.
  4. Beat the egg yolk and add it to the mixture along with 1-2 tablespoons of cold water, stirring until the dough forms.
  5. Chill the dough for about 20 minutes before rolling it out and pressing it into tartlet pans.
  6. Prick the bottoms of the tart shells with a fork to prevent puffing.
  7. Bake for 12-15 minutes until golden brown, then let cool completely.
Preparation of the fillings
  1. In a saucepan, combine blueberries, granulated sugar, lemon juice, cornstarch, and water. Cook over medium heat until thickened, stirring gently.
  2. Once thickened, let the blueberry filling cool.
  3. In a bowl, beat together softened cream cheese and butter until fluffy.
  4. Add powdered sugar and vanilla extract, mixing until creamy and smooth.
Assembly
  1. Spoon blueberry filling generously into each tart shell.
  2. Pipe the cream cheese mixture over the blueberries.
  3. Garnish with powdered sugar, fresh blueberries, and lemon zest if desired.
  4. Serve chilled.

Notes

Handle the tart dough gently; too much kneading can make it tough. You can also use frozen blueberries if fresh ones aren't available. For a jammy filling, consider adding a splash of vanilla extract to the blueberries while cooking. These tartlets can also be made with different fruits like peach or raspberry.
