Ingredients
  

For the crust
  • 1 and 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed Ensure the butter is cold for a flaky texture.
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 to 2 tablespoons cold water Add just enough to bring the dough together.
  • 1 pinch salt
For the filling
  • 1 and 1/2 cups fresh or frozen blueberries Frozen blueberries should be thawed and drained.
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
For the cream cheese topping
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional, for dusting)
  • Fresh blueberries (optional, for garnish)
  • Lemon zest (optional, for garnish)

Method
 

Preparation of the crust
  1. Preheat your oven to 350 degrees F.
  2. In a bowl, combine the flour, powdered sugar, and salt.
  3. Cut in the cold butter until the mixture resembles a crumbly texture.
  4. Add the egg yolk and just enough cold water to bring the dough together.
  5. Chill the dough in the fridge for about 20 minutes.
Baking the crust
  1. Roll the chilled dough out on a floured surface and press it into tartlet pans.
  2. Prick the bottoms with a fork to prevent puffing.
  3. Bake for 12 to 15 minutes, or until golden.
  4. Let the tart shells cool completely.
Making the filling
  1. In a saucepan over medium heat, combine blueberries, granulated sugar, lemon juice, cornstarch, and water.
  2. Cook and stir until the mixture thickens into a glossy filling.
  3. Let it cool completely.
Making the cream cheese topping
  1. In a large bowl, beat the softened cream cheese and butter together until fluffy.
  2. Add in powdered sugar and vanilla, beating until smooth.
Assembling the tartlets
  1. Spoon a layer of blueberry filling into each cooled tart shell.
  2. Using a star tip, pipe the cream cheese frosting on top.
  3. Garnish with fresh blueberries and a dusting of powdered sugar, if desired.

Notes

Serve chilled for best flavor. Store in an airtight container in the fridge.
