Method
Preparation of the crust
- Preheat your oven to 350 degrees F.
- In a bowl, combine the flour, powdered sugar, and salt.
- Cut in the cold butter until the mixture resembles a crumbly texture.
- Add the egg yolk and just enough cold water to bring the dough together.
- Chill the dough in the fridge for about 20 minutes.
Baking the crust
- Roll the chilled dough out on a floured surface and press it into tartlet pans.
- Prick the bottoms with a fork to prevent puffing.
- Bake for 12 to 15 minutes, or until golden.
- Let the tart shells cool completely.
Making the filling
- In a saucepan over medium heat, combine blueberries, granulated sugar, lemon juice, cornstarch, and water.
- Cook and stir until the mixture thickens into a glossy filling.
- Let it cool completely.
Making the cream cheese topping
- In a large bowl, beat the softened cream cheese and butter together until fluffy.
- Add in powdered sugar and vanilla, beating until smooth.
Assembling the tartlets
- Spoon a layer of blueberry filling into each cooled tart shell.
- Using a star tip, pipe the cream cheese frosting on top.
- Garnish with fresh blueberries and a dusting of powdered sugar, if desired.
