- Heat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a saucepan, heat the blueberries and allulose for about 5–6 minutes until they start to soften and burst.
- Stir in the chia seeds and allow the mixture to cool completely.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.
- Add the eggs, melted butter, Greek yogurt, vanilla, and monk fruit sweetener, stirring until a dough forms.
- Chill the dough in the refrigerator for 15 minutes, letting it firm up just a bit.
- Meanwhile, beat the cream cheese, additional monk fruit sweetener, and vanilla extract until smooth and creamy.
- Roll out the chilled dough between two sheets of parchment paper into a rectangle.
- Spread the cream cheese filling evenly over the dough.
- Spoon the cooled blueberry mixture over the cream cheese layer and spread it out gently.
- Roll the dough tightly from one end to the other, creating a beautiful spiral.
- Slice the rolled dough into 8 swirls and place them on the prepared baking tray.
- Bake for 22–26 minutes until they are golden brown and your kitchen is filled with a mouthwatering aroma.
- Allow the swirls to cool for about 15 minutes before serving.
