  • 1/4 cup coconut flour
  • 1/4 cup monk fruit sweetener for dough
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/3 cup melted unsalted butter
  • 2 tbsp Greek yogurt
  • 1 tsp vanilla extract
For the cream cheese filling
  • 6 oz cream cheese, softened
  • 2 tbsp monk fruit sweetener additional for filling
  • 1 tsp vanilla extract
For the blueberry mixture
  • 1 1/2 cups blueberries
  • 2 tbsp allulose
  • 1 tbsp chia seeds

Method

Preparation
  1. Heat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a saucepan, heat the blueberries and allulose for about 5–6 minutes until they start to soften and burst.
  3. Stir in the chia seeds and allow the mixture to cool completely.
  4. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.
  5. Add the eggs, melted butter, Greek yogurt, vanilla, and monk fruit sweetener, stirring until a dough forms.
  6. Chill the dough in the refrigerator for 15 minutes, letting it firm up just a bit.
  7. Meanwhile, beat the cream cheese, additional monk fruit sweetener, and vanilla extract until smooth and creamy.
  8. Roll out the chilled dough between two sheets of parchment paper into a rectangle.
  9. Spread the cream cheese filling evenly over the dough.
  10. Spoon the cooled blueberry mixture over the cream cheese layer and spread it out gently.
  11. Roll the dough tightly from one end to the other, creating a beautiful spiral.
  12. Slice the rolled dough into 8 swirls and place them on the prepared baking tray.
  13. Bake for 22–26 minutes until they are golden brown and your kitchen is filled with a mouthwatering aroma.
  14. Allow the swirls to cool for about 15 minutes before serving.
