Preparation
- Preheat your oven to 350°F (175°C) and place the oven rack in the center.
- Roast your sweet potatoes until they are tender and fragrant, then mash them into a smooth consistency.
- Combine the mashed sweet potatoes with granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, and spices. Stir well.
- Roll out your pie crust and fit it into a 9-inch pie dish, crimping the edges.
- Pour in the sweet potato filling, smoothing the top with a spatula.
Baking
- Bake for 55–60 minutes, or until the filling is set and a toothpick comes out clean.
- Allow the pie to cool on a wire rack for about 2 hours.
Serving
- Slice into generous pieces and serve with a swirl of fresh whipped cream or a scoop of vanilla ice cream.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven or microwave.
