  • 2 large Sweet Potatoes About 2 cups mashed
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Evaporated Milk
  • 1/2 cup Unsalted Butter Melted
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1/4 teaspoon Salt
For the crust
  • 1 9-inch Unbaked Pie Crust

Preparation
  1. Preheat your oven to 350°F (175°C) and place the oven rack in the center.
  2. Roast your sweet potatoes until they are tender and fragrant, then mash them into a smooth consistency.
  3. Combine the mashed sweet potatoes with granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, and spices. Stir well.
  4. Roll out your pie crust and fit it into a 9-inch pie dish, crimping the edges.
  5. Pour in the sweet potato filling, smoothing the top with a spatula.
Baking
  1. Bake for 55–60 minutes, or until the filling is set and a toothpick comes out clean.
  2. Allow the pie to cool on a wire rack for about 2 hours.
Serving
  1. Slice into generous pieces and serve with a swirl of fresh whipped cream or a scoop of vanilla ice cream.
