Ingredients
  

For the Rice Krispie Treats
  • 1/2 cup cake mix (white, yellow or funfetti) Toast briefly in microwave for enhanced flavor.
  • 10 ounces marshmallows (mini or regular) Use fresh marshmallows for best texture.
  • 1/3 cup butter Use dairy-free butter for a vegan version.
  • 1 teaspoon vanilla extract
  • 4 1/2 cups Rice Krispies cereal Can swap with puffed millet or corn puff.
  • 1/4 cup sprinkles (sequins or jimmies) Plus additional for topping.
  • 2 ounces white chocolate chips or almond bark Melt with a teaspoon of coconut oil for shine.

Method
 

Preparation
  1. Grease a square pan (8x8 or 9x9 inch) and set aside.
  2. Spread the cake mix on a microwave-safe plate and microwave on high for 30 seconds; stir and repeat until it has been microwaved a total of 90 seconds. Let cool.
Cooking
  1. In a large microwaveable bowl, add the butter and marshmallows. Cook on high for 3 minutes, stirring every 30 seconds, until melted.
  2. Add the vanilla and cooled cake mix; stir well.
  3. Stir in the Rice Krispies and sprinkles.
  4. Pour into the prepared pan and press the mixture into the pan.
  5. Melt the white chocolate and drizzle over the treats; top with more sprinkles if desired.
  6. Let cool, cut into bars and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days. For clean edges, chill the pan briefly and use a hot knife to cut.
