Ingredients
  

For the Peppers
  • 6 pieces bell peppers, cut in half lengthwise and seeds removed
For the Filling
  • 3 tablespoons extra-virgin olive oil Divided for pre-baking and sautéing
  • 3 cloves garlic, minced
  • 1/2 cup yellow onion, diced
  • 1 pound ground beef Can substitute with ground turkey or plant-based meat
  • 1 15-ounce can fire-roasted diced tomatoes
  • 2 cups baby spinach, roughly chopped
  • 1 1/2 cups cooked rice
  • 1/2 tablespoon Italian seasoning
  • to taste kosher salt and ground black pepper
  • 1/2 cup Monterey Jack or cheddar cheese, chopped For topping
  • to taste chopped parsley For garnishing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the bell peppers in half lengthwise and remove seeds.
  3. Drizzle 1 tablespoon of oil on them and pre-bake for 15 minutes.
Cooking
  1. In a skillet, heat the remaining oil and sauté the diced onions and minced garlic for about 2 minutes.
  2. Add the ground beef, cooking until browned, then drain excess liquid.
  3. Stir in fire-roasted diced tomatoes, cooked rice, spinach, and Italian seasoning. Season with kosher salt and pepper.
  4. Fill the pre-baked peppers with the beef mixture, top with cheese, and return them to the oven for 15-20 minutes.
Serving
  1. Serve on a platter and garnish with chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator. Consider adding spices like smoked paprika or crushed red pepper for added flavor.
