  • 3 cups sweetened shredded coconut Make sure to use sweetened for best flavor.
  • 3/4 cup sweetened condensed milk This adds sweetness and moisture.
  • 1 teaspoon vanilla extract Enhances the cookie flavor.
  • 1 large egg white Must be beaten until soft peaks form.
  • 1/4 teaspoon salt Balances sweetness.
Toppings
  • 1/2 cup semi-sweet chocolate chips, melted Optional: Add a little coconut oil for shine.
  • to taste Christmas sprinkles To make them festive.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix gently until well combined.
  3. In another bowl, beat the egg white with salt until soft peaks form. Carefully fold the whipped egg white into the coconut mixture.
  4. Scoop tablespoon-sized mounds of the mixture onto your prepared baking sheet, spacing them evenly.
Baking
  1. Bake in the preheated oven for 18 to 20 minutes, until the edges are golden and the tops are set.
  2. Allow the cookies to cool completely on the baking sheet.
Finishing Touches
  1. Drizzle the cooled cookies with melted chocolate and sprinkle with festive Christmas sprinkles.

For variations, consider adding almond extract, crushed macadamia nuts, dried cherries, or orange zest for added flavor.
