- In a large bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix gently until well combined.
- In another bowl, beat the egg white with salt until soft peaks form. Carefully fold the whipped egg white into the coconut mixture.
- Scoop tablespoon-sized mounds of the mixture onto your prepared baking sheet, spacing them evenly.
Baking
- Bake in the preheated oven for 18 to 20 minutes, until the edges are golden and the tops are set.
- Allow the cookies to cool completely on the baking sheet.
Finishing Touches
- Drizzle the cooled cookies with melted chocolate and sprinkle with festive Christmas sprinkles.
