Ingredients
  

For the Bavarian Cream
  • 2 cups heavy cream, divided Divided into two parts for mixing and whipping.
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 each vanilla bean, split lengthwise and seeds scraped Alternatively, use 1 teaspoon of vanilla extract.
  • 4 large egg yolks
  • 2 tablespoons unflavored gelatin powder
  • 1/4 cup cold water For blooming gelatin.
For the Berry Topping
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, and blackberries) Use a combination of your favorite berries.
  • 2 tablespoons granulated sugar Adjust according to the sweetness of the berries.
  • 1 tablespoon lemon juice Optional, for extra tang.

Method
 

Preparation
  1. Sprinkle gelatin over cold water in a small bowl and let bloom for 5-10 minutes.
  2. In a saucepan, combine 1 cup of heavy cream, whole milk, and sugar. Add the split vanilla bean and heat over medium for 15-20 minutes.
  3. Whisk the egg yolks until light and frothy. Temper the yolks with some warm cream, then return to the saucepan.
  4. Cook the mixture for 5-7 minutes until it thickens slightly, then stir in bloomed gelatin until completely dissolved.
  5. Strain custard to remove lumps and let cool slightly before folding in the remaining whipped heavy cream.
Chilling
  1. Pour the mixture into serving dishes and chill in the fridge for at least 4 hours.
Berry Preparation
  1. Toss mixed berries with sugar and lemon juice (if using) and chill for 30 minutes.
Serving
  1. Once Bavarian cream is set, spoon berry mixture over the top just before serving. Garnish with fresh mint if desired.

Notes

Ensure gelatin is fresh for best results. You can experiment with different berry combinations. Optional chocolate or coffee layers can be added for variation.
