Cake Base and Filling
  • 250 g flour All-purpose flour is ideal.
  • 150 g sugar
  • 150 g butter, softened Use room temperature butter for a smoother batter.
  • 2 pieces eggs Ensure eggs are at room temperature.
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 300 ml pastry cream or cherry jam Other filling options include chocolate ganache or fruit.

Method
 

Preparation
  1. Begin by beating the softened butter and sugar in a bowl until the mixture is creamy and light.
  2. Introduce the eggs, followed by the vanilla, blending until incorporated.
  3. Gradually sift in the flour and baking powder, allowing the dough to come together.
  4. Divide the dough into two parts.
  5. Gently press one portion into a prepared pan.
  6. Spread the pastry cream or cherry jam on top.
  7. Top with the remaining dough.
Baking
  1. Bake in a preheated oven at 180°C for 35-40 minutes until golden brown.
Serving
  1. Serve slightly warm with a dollop of fresh cream or a scoop of vanilla ice cream.

Notes

To store, keep in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly and refrigerate or freeze individual slices.
