Ingredients
  

For the Bread Pudding
  • 6 slices sourdough bread (day old, thick) Sturdy bread is recommended for better absorption of custard.
  • 1/2 tsp nutmeg Ground spice for added warmth.
  • 1/2 tsp ground cinnamon Ground spice for flavor enhancement.
  • 1/4 tsp ginger (ground) For an added layer of spice.
  • 450 ml thick custard Use a good quality custard.
  • 1/2 cup milk Helps to create the custard mixture.
  • 1 large egg Adds richness to the custard.
  • 2 bananas (mashed, overripe) Overripe bananas enhance the sweetness.
  • 1 cup dark brown sugar Provides sweetness and depth of flavor.
  • 1 tbsp dark brown sugar (extra) For topping.
  • 4 tbsp butter (softened) To mix with spices and layer on bread.
  • 1/4 cup cream For making the caramel sauce.
  • 1/4 cup canola oil For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 180°C (356°F) and grease a heavy round casserole dish with a light brush of canola oil.
  2. Mix 2 tablespoons of butter with nutmeg, cinnamon, and ginger, then spread on both sides of the thick sourdough slices.
Custard Mixture
  1. In a mixing bowl, combine milk, egg, and custard until smooth.
  2. In a saucepan over medium heat, combine cream, 2 tablespoons of butter, and dark brown sugar, whisking for 5-7 minutes until dissolved and caramel forms.
Assembly
  1. Layer the bottom of the dish with bread, then add mashed banana and drizzle with caramel sauce. Continue layering with remaining bread, allowing it to soak in the custard mixture.
Baking
  1. Cover the dish and bake for 20 minutes; uncover and sprinkle with 1 tablespoon of dark brown sugar, then bake for an additional 10 minutes until custard sets and top is golden.
  2. Allow to cool slightly before drizzling with remaining caramel sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently in the oven or microwave. To elevate, use day-old bread and consider adding chocolate chips or nuts.
