Preparation
- Preheat oven to 375°F (190°C) and line an 8x8 baking dish with parchment paper.
- In a large bowl, beat together sugar, sour cream, butter, and egg until creamy.
- Blend in the mashed bananas and vanilla extract.
- Add flour, baking soda, and salt, stirring until just combined.
- Spread the batter evenly into the pan.
Baking
- Bake for 20 to 25 minutes or until golden brown. Let cool slightly, then remove from the pan using the parchment.
Frosting
- In a medium saucepan over medium-high heat, brown the butter until brown bits form.
- Pour the brown butter into a heat-proof bowl and whisk.
- Add powdered sugar and vanilla, mixing until smooth.
- Spread the icing on the bars after they have cooled for about 10-15 minutes.
Notes
Cut into generous squares while the frosting is still soft. Serve slightly warm or at room temperature. Store in an airtight container at room temperature for up to 2 days, refrigerate for up to 5 days, or freeze for up to 2 months.
